4-Ingredient Peanut Butter Cookies (Gluten & Dairy Free!)

I’ve been a very busy girl lately, with not a lot of time to cook. (Although does that REALLY stop me?! Heck no! LOL) As you can see… I’m still at it! And these were super quick and simple to make. With only 4 ingredients how can it not be right?! I was a little skeptical at first, i mean, there are only 4 ingredients?! But, as you can see, they turned out awesome! They’re peanut butter heaven in your mouth. Just a little crunchy on the outside, and oh so moist and delicious on the inside! Peanut butter is kind of a no-no for me, especially in something like this where its the main ingredient! But…..I did sneak a bite or two in…just to taste test them! It was worth the stomach-ache i have had since! LOL Hubs hasn’t complained though, cause with me out of the picture on these, he got the whole batch! Thank goodness it only made like 11 cookies i think! So, if you’re a peanut butter lover, this is the cookie for you! AND top it all off with being both gluten and dairy free! This one’s a winner….enjoy! 🙂

4-Ingredient Peanut Butter Cookies (Printable Version)4-Ingredient PB Cookie

Ingredients

  • 1 cup peanut butter, smooth or crunchy
  • 1 cup sugar
  • 1 egg, lightly beaten
  • 1 teaspoon vanilla

Instructions

  1. Preheat the oven to 350 degrees F. and line a large baking sheet with parchment paper or spray the pan with non stick spray.
  2. Using a mixer, or by hand, mix the peanut butter, sugar, egg and vanilla in a medium bowl until well combined.
  3. Use a medium cookie scoop, and place (9-12) cookies on the pan.
  4. Flatten the dough with the tines of a fork, making a criss-cross pattern on the cookies.
  5. Bake the cookies for 10 minutes. Let cool on pan for 2 minutes before moving them to a cooling rack.

Cinnamon Roll Scones (Gluten & Dairy Free)

Step 1: Admittance. “I admit I am a cinnamon roll junkie!” LOL I think I have posted well more than my share of cinnamon roll inspired recipes! But……..can you blame me?! You really can’t beat that amazing, melt in your mouth cinnamon roll flavor! And the smell?! You know the one….like when you’re walking in the mall by the Cinnabon and within seconds of smelling that overwhelmingly delicious cinnamon scent, you’ve just gotta have one! Of course, having food allergies makes that impossible! So that’s where these come in! These seriously taste just like cinnamon rolls. The inside is moist and full of an intense cinnamon flavor. And the glaze…. sets these over the top! If you’re partial to raisins or nuts in your cinnamon rolls, then go for it! Throw some in there….whatever floats your boat! You could even spread some cream cheese frosting on these instead of the glaze. These are super easy to make…..I whipped up a batch for breakfast before work (and couldn’t help myself, I ate another one mid-morning for a snack, oh and then again later for a late-night snack! Oops! LOL)  WOW.  Admitting THAT makes me feel a little guilty after having said it out loud, not to mention documenting it on here for the whole world to know!! LOL  But at least they have oats in there….that cancels out the calories right?! Thankfully scones don’t actually have that much sugar in them! So, seriously…. go to the kitchen and make these now! Cinnamon Roll Scones (Printable Version)IMG_3126

SCONES:
2 cups  gluten free flour

1 tsp xanthan gum
1 cup quick oatmeal, uncooked
1/4 cup + granulated sugar
1 Tablespoon baking powder
1/4 teaspoon salt
8 Tablespoons non-dairy butter
3/4 cup almond milk
1 large egg, lightly beaten
1 teaspoon vanilla extract

2 teaspoons ground cinnamon

2 Tablespoons granulated sugar

GLAZE:
3/4 cup powdered sugar
1/4 teaspoon vanilla
3 to 4 teaspoons water

Directions:

1. Preheat oven to 425°F. Line a baking sheet with parchment paper.

2. In a large bowl, combine flour, gum, oatmeal, 1/4 cup sugar, baking powder and salt. Cut in butter with pastry blender until mixture resembles coarse crumbs.

3. In a small bowl, combine milk, egg and vanilla. Add to dry ingredients all at once; stir until dry ingredients are just moistened.

4. In another small bowl, combine remaining 2 Tablespoons sugar with the cinnamon; mix well. Sprinkle evenly over dough in bowl; gently stir batter to swirl in cinnamon mixture.

5. Drop dough by 1/4 cupfuls (ice cream scoop) 2 inches apart on cookie sheet. Bake 11 to 13 minutes or until golden brown. Remove to wire rack; cool 5 minutes.

6. To make glaze: In small bowl, combine powdered sugar, vanilla and enough water for desired consistency; mix until smooth. Drizzle over tops of warm scones. Serve warm.

Yield: 8

Gluten & Dairy Free Sugar Cookies

OK! As promised…. here is the recipe for the most amazing sugar cookies ever! You won’t even believe that they are actually both gluten and dairy free!! (But they ARE!!)  I really missed sugar cookies this holiday season, and decided to revamp my old favorite sugar cookie recipe and i couldn’t believe how awesome they were! So soft and moist and melt in your  mouth delicious! The first few days they are the best….especially right out of the oven and the frosting starts to melt a little on top! Mmmm…… now i want to make another batch! LOL  Hubs and i were both like uhm, WHY didn’t we do this like 3 years ago!? LOL So….now that i know how scrumptious these cookies are, and not to mention easy to make, no rolling is the best!! Just mix them up, scoop and bake. Simple! I have to remember to have a little self control and not make them that often! These are definitely gonna be my holiday cookie stand-by though. I kinda cheated and used the store bought frosting….its both gluten and dairy free too, so why not right?! All you have to do is change out the sprinkles and you can be totally festive for every and any holiday! I never know what to make for those holiday treats, but now I’m all set! So seriously……give these a try….like today! AMAZING!! Enjoy! 🙂

Sugar Cookies (Gluten & Dairy Free) (Printable Version)

Ingredients

Sugar Cookies

  • 3/4 cup shortening
  • 3/4 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 3 cups gluten free flour
  • 1 1/2 teaspoon xanthan gum
  • 3 teaspoons baking powder
  • 1/8 teaspoon salt
  • 1 can pre-made GF/DF white frosting, sprinkles, etc.

Directions

In a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs and vanilla. Combine the flour, gum, baking powder and salt; gradually add to creamed mixture and mix well.

Shape dough into 1-1/2-in. balls. Place 1 in. apart on greased baking sheets. Bake at 400° F. for 8-10 minutes or until lightly browned. Remove to wire racks to cool.  Frost & decorate as desired.

Kicking 2013 off right with Mason Jar Salads

Every year the same New Year’s resolutions are made….and kept, with the best of intentions…..for about a week! LOL This is not just me I’m talking about here and you know it! The biggest one I hear of is people wanting to be healthier….eat healthy and exercise more. I’m gonna tell ya, sticking to that is hard work! And even with the best of intentions, its not always gonna happen! So…. I’m gonna see how long I can last this year! I don’t know where the time goes every morning when I’m getting ready for work (obviously its NOT cause I’m sitting here writing blogs, cause Ive been slacking lately. OH! Another NY resolution! LOL) Anyhow….I feel terrible when I don’t have time to fix something for hubs to take to work for lunch…. I mean, a guy can only eat so many lean pockets right?! LOL  So I saw this idea on Pinterest (yes that handy little devil of a website that is totally addicting and steals all my time! You KNOW what I’m talking about here right?!) And I thought….ohhhh yeah! I could SO do that! So…. a little jaunt over to Walmart for supplies….. and a huge mess in the kitchen…..viola! Success!! And I’m DONE with the entire weeks meals. Mason Jar SaladsNot only did I make the lovely mason jar salads for lunch, but I did smaller ones with layered fresh fruit! SO cute! LOL So….breakfast, lunch and 2 snacks are packed and ready to go for the rest of the week. Now if I can just make myself overcome my sheer exhaustion when I get home from work and make something good and healthy for dinner (like i USED to….this aging thing is CRAP i tell ya! LOL). These jar salads are totally customizable too….you really cant go wrong….unless you’re a picky eater (ahem, I wont mention any names but you know I’m talking about you! Biscuit Crust Pizza (Gluten, Dairy & Yeast Free)

I know, I know…….another pizza recipe! LOL What can i say? I LOVE pizza! And i miss not being able to eat it! I love my little personal pan pizzas, but sometimes I just wanna make a big, doughy-crust pizza! And this one is IT!! It’s seriously amazing…..and amazingly easy to make too! I couldn’t believe how easy….or how tasty it ended up being!! As you can see…..it turned out pretty well! It’s like eating pizza with a cheesy bread crust! YUM! I sprinkled some corn meal on the pizza pan before I laid the crust on it…. and I don’t use sauce, but you can easily tweak this to your ideal pizza by adding whatever toppings you want. But really…..the crust is what makes this pizza! And I’m sure you’ve got all the ingredients right on hand, so go home tonight after work, and make this!! LOL  You’ll never eat yeast pizza dough again! Its so time consuming and really just a pain in the butt to make anyways!! Thank goodness I can’t eat yeast, cause that means I get to eat this one instead!! Give it a try…. I’m thinking you could also simply make cheesy bread out of it too, if you wanted! YAY! I’m so excited for you guys to try this one out!! Enjoy! 🙂

Biscuit Crust Pizza (Printable Version)

Ingredients:

2 cups gluten free flour

1 tsp xanthan gum
1 teaspoon garlic powder
1 teaspoon salt
2 teaspoons Italian seasoning
4 teaspoons baking powder
1/4 teaspoon baking soda
4 tablespoons cold non-dairy butter
3/4 to 1 cup “buttermilk” (almond milk with a squirt of lemon juice)
ND butter, Parmesan, sauce (opt), cheese, and toppings

Directions:

Preheat the oven to 450ºF. Combine the flour, garlic, salt, seasoning, baking powder and soda. Cut in the butter using a pastry blender. Add 3/4 cup buttermilk. Add a tablespoon more at a time until you can mix all the flour in. Take the dough out of the mixing bowl and flatten it and fold it over itself a few times. Pat/press it out to about an 11 inch circle or so. Fold in the edges to create a crust. Top with sauce (opt), cheese, and toppings. Bake for about 15 minutes or until the crust is browned around the edges and the cheese is bubbling. Brush the edges with melted non-dairy butter and sprinkle with Parmesan. Garnish with basil.

Pizza Scones (Gluten Free)

Mmmmmmmm…… pizza! Have I mentioned just how much i love pizza?! Almost as much as i love breakfast! LOL  I love trying pizza in new, fun and exciting ways!  New flavor combinations, with my gourmet pizzas, pizza bites, pizza bread, and now pizza scones! These are easily adaptable to be whatever kind of pizza you want. I went with a supreme-ish version, using sausage, olives and peppers. Im not a big pepperoni fan, but im sure it would be a hit! Im going to try a chicken bacon ranch version too! To make these dairy-free just sub out the cheese for soy cheese! These are also super easy and quick to make….. and they make a great snack too! Just in time for football season right?!?  These are also “hunter approved” I made these for the guys as a snack before they left to go hunting…….and they loved them! This ones definitely a keeper! Not your plain ole boring pizza, these are unique and tasty! Give it a try tonight! TGIF! Enjoy! 🙂

Pizza Scones (Printable Version)

Ingredients:
1 cup gluten free flour

1/2 tsp xanthan gum
1/2 Tbsp baking powder
1/4 tsp baking soda
1/8 tsp salt
1/4 cup cold non-dairy butter
1 cup pizza toppings, chopped
1/2 cup mozzarella cheese, shredded + some for topping
1/4 cup + 2 Tbsp  almond milk, plus some to brush tops
1 cup marinara sauce for dipping (optional)

Directions:
1. Preheat oven to 425 degrees. In a large bowl combine flour, baking powder, baking soda and salt with a whisk. Toss the butter into bowl and cut into dry ingredients with a pastry cutter.

2. Add pizza toppings and cheese to flour mixture, tossing a little to coat additions with flour.
3. Add almond milk and mix to just combine.

4. Place the dough on a lightly floured clean surface. Press into a large circle about 1 inch thick. Cut scones into wedges. Place scones on a parchment lined baking sheet. Sprinkle with cheese
5. Brush tops of scones with almond milk. Bake for about 15 minutes or until tops are lightly browned. Use a dipping sauce of marinara sauce if desired.

 

Grilled Chicken, Peach & Caramelized Sweet Onion Pizza (Gluten Free)

You might be thinking what in the world is this girl thinking?! LOL I know it sounds a little…. uhm, gourmet, but just trust me on this one ok?! It is incredible!! The peach and caramelized sweet onions (and not just any onions mind you, these were amazing Walla Walla Sweet Onions, omg are they gooood!) add a nice sweet flavor that is an amazing flavor combination with the savory basil and smokey bacon flavors. I can’t even tell you how freakin good this pizza is!! Its similar to the Strawberry-Basil Chicken Bacon Pizza I made a while back. That one is delish too! I’m kind of on a mission to make as many different and unique kinds of pizza! I absolutely loooove pizza, I mean who doesn’t right?! LOL  Its hard for me since I can’t have tomatoes or dairy, really, so coming up with new and exciting recipes for delicious pizza is my new thing! These are great cause the crust is super easy to make, and its yeast-free! Bonus for me!! To make it dairy free, just sub the cheese for soy-cheese. I splurged on regular mozzarella this time but to each their own right?! I’ve got some great pizza ideas rolling around in my head, so stay tuned!! Plenty more options to try soon! In the meantime tho, give these 2 pizzas a try!! It IS Friday….. so how bout some home-made gourmet pizza and a movie?! YAY for date nite right?! Enjoy! 🙂

Grilled Chicken, Peach & Caramelized Sweet Onion Pizza (Printable Version)

Ingredients

3 prepared mini pizza crusts made w/ basil

3 Tbsp peach jam

1/2 Medium sweet Onion

1⁄2 teaspoon Minced Garlic

1 large Peach, peeled & sliced

1 tsp basil

1 cup shredded Mozzarella Cheese

1 boneless chicken breast

1/4 cup cooked, crumbled bacon bits

Instructions

  1. Preheat oven to 425 degrees.
  2. Prepare pizza crust as directed on GF Bisquick box.
  3. Spread dough into 3 greased mini tart pans. Bake 10 minutes.
  4. Rub oil and basil onto the chicken breast and grill on a George Foreman grill on med-high until cooked thru. Cut into strips.
  5. Caramelize the onion on medium heat, add in garlic for last 5 minutes.
  6. Remove crust from oven and spread with jam and half the mozzarella cheese.
  7. Add the peaches, chicken, caramelized onions and bacon bits. Top with rest of cheese and sprinkle with basil.
  8. Bake for 15 minutes or until browned.

Zucchini Brownies (Gluten & Dairy Free)

OK so I know its been awhile since I last posted…..and i apologize! Its been crazy hectic working on the kitchen and then we went on vacation…. Vegas baby! LOL It was a blast….but it sure felt good to get home! And back to a working kitchen! I’ll give you a little kitchen update real quick….I have cabinets, and counters and plumbing!! And I got a lot of my stuff moved back in! YAY!! Still waiting on some cabinets so I’ll have a center island soon, but its useable! Now I’ve been wanting to cook up a storm! Got lots of catching up to do! LOL I got to try some new restaurants out while we were there…so I’ll give you a little review. I’ve gotta say……my new fave place is Outback Steakhouse!! omg…..their honey mustard sauce is to die for!! I’ve already got my copycat recipe, and its on the menu for tonight…..so stay tuned! LOL  They actually have a gluten free menu, which is nice. We also ate at PF Changs, which has a gluten free menu, and it was soooo good too! The other places we ate were Hardrock cafe, which they made what i wanted how i wanted it. I wasn’t impressed with Planet Hollywood, but we went to the Rainforest Cafe in the MGM hotel, and the chef came out and personally talked to me, which was awesome! It was really delicious too! The only bad thing was we didn’t have a way to keep leftovers! I felt so bad wasting so much food, cause I don’t eat a whole lot at once, and it was all so yummy! Anyways… lets get on to the recipe already! These brownies are a-maz-ing! LOL Seriously this is the second batch Ive made in a week and I still didn’t end up getting a picture so i had to borrow this one! LOL They are so moist and fudgy and full of chocolatey goodness! (I’m a chocoholic if ya couldn’t tell!) But i don’t feel too bad cause its got a healthy “secret” ingredient….yup that’s right….zucchini! Which are overrunning my garden as we speak! Zucchini Brownies (Printable Version)

Ingredients:
1 egg
2 tsp vanilla
1 cup sugar
1/4 cup vegetable oil
1 cup GF flour

½ tsp xanthan gum
1/4 cup unsweetened cocoa powder
1 1/2 tsp baking soda
1/4 tsp salt
1 tsp instant espresso coffee
2 cups shredded zucchini
1/2 cup mini chocolate chips

Directions:
Preheat oven to 350 degrees and spray a 8×8 in square pan with non stick cooking spray.

Combine the egg, vanilla, sugar, and oil in a large bowl until combined.

Add the flour, gum, cocoa, baking soda, salt, espresso, zucchini & chocolate chips.

Pour into pan and bake for 35-45 minutes or until a few moist crumbs stick to a tooth pick.

Pineapple Chicken Pizza (Gluten, Dairy & Yeast Free)

For some reason Ive been craving pizza lately. And I like to try new kinds……as you can tell by my last few pizza posts! Ive got a few more up my sleeve, but this one i just had to share cause its so darn tasty! I LOVE pineapple chicken……and I had a nice fresh pineapple, so I thought….why not just make a pineapple chicken pizza?! I had just bought some applewood-flavored liquid smoke too, so I gave that a try…….the flavor of this pizza is amazing!! I used real cheese, but to make it dairy free, just use soy cheese. These reheat really well too……mmmm can’t wait for lunch leftovers today! And i just have to say it…….again…..i LOVE my mini tart pans!! They make the crust SOOO much better!! And then they’re also portion controlled! LOL  The kitchen is coming along……I should have some photos up soon……which means a bake-a-thon is in the works!! YAY!! I can’t WAIT! Pineapple Chicken Pizza (Printable Version)

Ingredients:

Pizza Crust:

1 1/3 cup GF Bisquick

½ cup water

1/3 cup oil

2 eggs

Cooking spray
Chicken:

2 chicken breasts, cut into 1-inch pieces

Applewood-flavored Liquid Smoke

Chicken broth

Toppings:

1 cup grated mozzarella cheese
1/2 cup grated cheddar cheese

¼ c crumbled bacon bits
½ cup diced fresh pineapple
2 green onions, chopped

¼ cup diced sweet red pepper

Directions:

Preheat the oven to 425 degrees. Mix crust ingredients in medium bowl. Spray 6 mini tart pans and spread crust evenly into pans. Bake 10 minutes. Meanwhile cook the chicken in the chicken broth and liquid smoke until cooked through. Top with the cheddar cheese, then the chicken, bacon, pineapple, peppers, onions and mozzarella cheese. Bake for another 10 minutes, until all the cheese is melted and the crust is golden brown.

Taco Pizza (Gluten, Dairy & Yeast Free)

Ever want two different kinds of food at once?  They both sound so good but you just cant decide which to have?! The only thing to do is to combine them……which led me to this wonderfully delicious taco pizza. To ensure a nice taco flavor, I added taco seasoning to the crust as well as the meat. The crust is topped with re-fried beans as the sauce, taco meat (you can use ground beef, I just used ground turkey cause i don’t eat red meat) and of course taco toppings! I used red peppers instead of tomatoes as I cant have them, but either will work! These are super easy and quick to make, and not only are they cute, they are TASTY! The crust is crispy yet still soft and the beans compliment the taco flavor. You can serve these with shredded lettuce, sour cream, salsa, guacamole, etc if you want, but they are amazing without! They are even yummy reheated (not that you’ll have that problem!) To make them dairy-free you can use soy cheese……but i splurged on this one! Ive got some more new recipes to try soon, as my kitchen will have counters and a sink again soon! Well I’m off to bake…. so look forward to my next post! Taco Pizza (Printable Version)

Crust:

  • 1 1/3 cup GF Bisquick
  • ½ tsp GF taco seasoning
  • ½ cup water
  • 1/3 cup oil
  • 2 eggs
  • Cooking spray & corn meal

Mix crust ingredients in a medium bowl. Spray 6 mini tart pans with cooking spray and sprinkle with corn meal. Spread batter evenly into pans. Bake at 425 F for 10 minutes. Meanwhile cook your meat, add taco seasoning and prepare toppings.

Toppings:

  • 1  lb lean ground turkey
  • 1-2 tsp GF taco seasoning
  • 8 oz can refried beans
  • 1 cup shredded taco blend cheese
  • ½ cup sliced black olives
  • ¼ cup chopped red bell pepper
  • 2 green onions, chopped

Spread beans over crust. Top with meat, sprinkle with toppings.  Return to oven and bake 10 more minutes until cheese is melted.
