Biscuit Crust Pizza (Gluten, Dairy & Yeast Free)

I know, I know…….another pizza recipe! LOL What can i say? I LOVE pizza! And i miss not being able to eat it! I love my little personal pan pizzas, but sometimes I just wanna make a big, doughy-crust pizza! And this one is IT!! It’s seriously amazing…..and amazingly easy to make too! I couldn’t believe how easy….or how tasty it ended up being!! As you can see… turned out pretty well! It’s like eating pizza with a cheesy bread crust! YUM! I sprinkled some corn meal on the pizza pan before I laid the crust on it…. and I don’t use sauce, but you can easily tweak this to your ideal pizza by adding whatever toppings you want. But really…..the crust is what makes this pizza! And I’m sure you’ve got all the ingredients right on hand, so go home tonight after work, and make this!! LOL  You’ll never eat yeast pizza dough again! Its so time consuming and really just a pain in the butt to make anyways!! Thank goodness I can’t eat yeast, cause that means I get to eat this one instead!! Give it a try…. I’m thinking you could also simply make cheesy bread out of it too, if you wanted! YAY! Biscuit Crust Pizza (Printable Version)


2 cups gluten free flour

1 tsp xanthan gum
1 teaspoon garlic powder
1 teaspoon salt
2 teaspoons Italian seasoning
4 teaspoons baking powder
1/4 teaspoon baking soda
4 tablespoons cold non-dairy butter
3/4 to 1 cup “buttermilk” (almond milk with a squirt of lemon juice)
ND butter, Parmesan, sauce (opt), cheese, and toppings


Preheat the oven to 450ºF. Combine the flour, garlic, salt, seasoning, baking powder and soda. Cut in the butter using a pastry blender. Add 3/4 cup buttermilk. Add a tablespoon more at a time until you can mix all the flour in. Take the dough out of the mixing bowl and flatten it and fold it over itself a few times. Pat/press it out to about an 11 inch circle or so. Fold in the edges to create a crust. Top with sauce (opt), cheese, and toppings. Bake for about 15 minutes or until the crust is browned around the edges and the cheese is bubbling. Brush the edges with melted non-dairy butter and sprinkle with Parmesan. Garnish with basil.


Pizza Scones (Gluten Free)

Mmmmmmmm…… pizza! Have I mentioned just how much i love pizza?! Almost as much as i love breakfast! LOL  I love trying pizza in new, fun and exciting ways!  New flavor combinations, with my gourmet pizzas, pizza bites, pizza bread, and now pizza scones! These are easily adaptable to be whatever kind of pizza you want. I went with a supreme-ish version, using sausage, olives and peppers. Im not a big pepperoni fan, but im sure it would be a hit! Im going to try a chicken bacon ranch version too! To make these dairy-free just sub out the cheese for soy cheese! These are also super easy and quick to make….. and they make a great snack too! Just in time for football season right?!?  These are also “hunter approved” I made these for the guys as a snack before they left to go hunting…….and they loved them! This ones definitely a keeper! Not your plain ole boring pizza, these are unique and tasty! Give it a try tonight! TGIF! Enjoy! 🙂

Pizza Scones (Printable Version)

1 cup gluten free flour

1/2 tsp xanthan gum
1/2 Tbsp baking powder
1/4 tsp baking soda
1/8 tsp salt
1/4 cup cold non-dairy butter
1 cup pizza toppings, chopped
1/2 cup mozzarella cheese, shredded + some for topping
1/4 cup + 2 Tbsp  almond milk, plus some to brush tops
1 cup marinara sauce for dipping (optional)

1. Preheat oven to 425 degrees. In a large bowl combine flour, baking powder, baking soda and salt with a whisk. Toss the butter into bowl and cut into dry ingredients with a pastry cutter.

2. Add pizza toppings and cheese to flour mixture, tossing a little to coat additions with flour.
3. Add almond milk and mix to just combine.

4. Place the dough on a lightly floured clean surface. Press into a large circle about 1 inch thick. Cut scones into wedges. Place scones on a parchment lined baking sheet. Sprinkle with cheese
5. Brush tops of scones with almond milk. Bake for about 15 minutes or until tops are lightly browned. Use a dipping sauce of marinara sauce if desired.


Grilled Chicken, Peach & Caramelized Sweet Onion Pizza (Gluten Free)

You might be thinking what in the world is this girl thinking?! LOL I know it sounds a little…. uhm, gourmet, but just trust me on this one ok?! It is incredible!! The peach and caramelized sweet onions (and not just any onions mind you, these were amazing Walla Walla Sweet Onions, omg are they gooood!) add a nice sweet flavor that is an amazing flavor combination with the savory basil and smokey bacon flavors. I can’t even tell you how freakin good this pizza is!! Its similar to the Strawberry-Basil Chicken Bacon Pizza I made a while back. That one is delish too! I’m kind of on a mission to make as many different and unique kinds of pizza! I absolutely loooove pizza, I mean who doesn’t right?! LOL  Its hard for me since I can’t have tomatoes or dairy, really, so coming up with new and exciting recipes for delicious pizza is my new thing! These are great cause the crust is super easy to make, and its yeast-free! Bonus for me!! To make it dairy free, just sub the cheese for soy-cheese. I splurged on regular mozzarella this time but to each their own right?! I’ve got some great pizza ideas rolling around in my head, so stay tuned!! Plenty more options to try soon! Grilled Chicken, Peach & Caramelized Sweet Onion Pizza (Printable Version)


3 prepared mini pizza crusts made w/ basil

3 Tbsp peach jam

1/2 Medium sweet Onion

1⁄2 teaspoon Minced Garlic

1 large Peach, peeled & sliced

1 tsp basil

1 cup shredded Mozzarella Cheese

1 boneless chicken breast

1/4 cup cooked, crumbled bacon bits


  1. Preheat oven to 425 degrees.
  2. Prepare pizza crust as directed on GF Bisquick box.
  3. Spread dough into 3 greased mini tart pans. Bake 10 minutes.
  4. Rub oil and basil onto the chicken breast and grill on a George Foreman grill on med-high until cooked thru. Cut into strips.
  5. Caramelize the onion on medium heat, add in garlic for last 5 minutes.
  6. Remove crust from oven and spread with jam and half the mozzarella cheese.
  7. Add the peaches, chicken, caramelized onions and bacon bits. Top with rest of cheese and sprinkle with basil.
  8. Bake for 15 minutes or until browned.

Calzones (Gluten-Free)

For whatever reason yesterday, I was craving a calzone. One of the local pizza joints has what they call, “Oven Subs” and on Tuesdays, they’re BOGO! We used to get those alot, before I realized my food allergies. So…. I decided that I would just make my own, and they were going to be fantastic! I mean really…..who needs fast food anyways right?! LOL  (i do, i do! but maybe a home-made healthier version of things yeah?!) I’m not supposed to have yeast or dairy….but it’s been a reallllly long time, so i figured meh, why not?! So this is my BIG splurge! And ooooooooomg were they SO worth it! A-maaa-zing! This recipe can be varied as much as you want with the toppings, I went with Hawaiian cause its my fave! I don’t use sauce because I can’t have tomatoes, but feel free to use any sauce you want! These were absolutely fabulous! When we cut them and pulled out a slice, the cheese would string out with it, you know, like you see in only the best, most yummiest of pizzas! Hahaha….yeah, they were THAT good! I was definitely impressed with how they turned out…..they were just as good as the ones I was missing! That said…..hope you’ll give it a try and enjoy! 🙂

Calzones (Printable Version)


  • 1 box Hodgson Mill GF pizza crust
  • Toppings
    • 1 package mozzarella cheese slices
    • 1 package Canadian bacon
    • 2 green onions, sliced
    • Chopped up honey ham deli meat
    • Fresh pineapple, chopped
    • Bacon bits
    • Parmesan cheese
    • Italian or pizza seasoning


  • Spray 2 pizza pans with non-stick spray and sprinkle with cornmeal
  • Prepare crust as directed on box just thru the rise part.
  • Meanwhile, prepare your toppings
  • Once the dough has risen, top one of the pizza crusts with your toppings. (I layered mine with cheese, meat the rest of the toppings, the layered the meat and cheese on top again. )
  • Place the other pizza crust corn meal side up on top.
  • Press all the edges together to seal it up.
  • Spray with cooking spray and sprinkle with Parmesan cheese and Italian seasonings.
  • Bake at 375 for 30 minutes or until done.

Pineapple Chicken Pizza (Gluten, Dairy & Yeast Free)

For some reason Ive been craving pizza lately. And I like to try new kinds……as you can tell by my last few pizza posts! Ive got a few more up my sleeve, but this one i just had to share cause its so darn tasty! I LOVE pineapple chicken……and I had a nice fresh pineapple, so I thought….why not just make a pineapple chicken pizza?! I had just bought some applewood-flavored liquid smoke too, so I gave that a try…….the flavor of this pizza is amazing!! I used real cheese, but to make it dairy free, just use soy cheese. These reheat really well too……mmmm can’t wait for lunch leftovers today! And i just have to say it…….again…..i LOVE my mini tart pans!! They make the crust SOOO much better!! And then they’re also portion controlled! LOL  The kitchen is coming along……I should have some photos up soon……which means a bake-a-thon is in the works!! YAY!! I can’t WAIT! Pineapple Chicken Pizza (Printable Version)


Pizza Crust:

1 1/3 cup GF Bisquick

½ cup water

1/3 cup oil

2 eggs

Cooking spray

2 chicken breasts, cut into 1-inch pieces

Applewood-flavored Liquid Smoke

Chicken broth


1 cup grated mozzarella cheese
1/2 cup grated cheddar cheese

¼ c crumbled bacon bits
½ cup diced fresh pineapple
2 green onions, chopped

¼ cup diced sweet red pepper


Preheat the oven to 425 degrees. Mix crust ingredients in medium bowl. Spray 6 mini tart pans and spread crust evenly into pans. Bake 10 minutes. Meanwhile cook the chicken in the chicken broth and liquid smoke until cooked through. Top with the cheddar cheese, then the chicken, bacon, pineapple, peppers, onions and mozzarella cheese. Bake for another 10 minutes, until all the cheese is melted and the crust is golden brown.

Taco Pizza (Gluten, Dairy & Yeast Free)

Ever want two different kinds of food at once?  They both sound so good but you just cant decide which to have?! The only thing to do is to combine them……which led me to this wonderfully delicious taco pizza. To ensure a nice taco flavor, I added taco seasoning to the crust as well as the meat. The crust is topped with re-fried beans as the sauce, taco meat (you can use ground beef, I just used ground turkey cause i don’t eat red meat) and of course taco toppings! I used red peppers instead of tomatoes as I cant have them, but either will work! These are super easy and quick to make, and not only are they cute, they are TASTY! The crust is crispy yet still soft and the beans compliment the taco flavor. You can serve these with shredded lettuce, sour cream, salsa, guacamole, etc if you want, but they are amazing without! They are even yummy reheated (not that you’ll have that problem!) To make them dairy-free you can use soy cheese……but i splurged on this one! Ive got some more new recipes to try soon, as my kitchen will have counters and a sink again soon! Well I’m off to bake…. so look forward to my next post! Taco Pizza (Printable Version)


  • 1 1/3 cup GF Bisquick
  • ½ tsp GF taco seasoning
  • ½ cup water
  • 1/3 cup oil
  • 2 eggs
  • Cooking spray & corn meal

Mix crust ingredients in a medium bowl. Spray 6 mini tart pans with cooking spray and sprinkle with corn meal. Spread batter evenly into pans. Bake at 425 F for 10 minutes. Meanwhile cook your meat, add taco seasoning and prepare toppings.


  • 1  lb lean ground turkey
  • 1-2 tsp GF taco seasoning
  • 8 oz can refried beans
  • 1 cup shredded taco blend cheese
  • ½ cup sliced black olives
  • ¼ cup chopped red bell pepper
  • 2 green onions, chopped

Spread beans over crust. Top with meat, sprinkle with toppings.  Return to oven and bake 10 more minutes until cheese is melted.

Strawberry-Basil Chicken & Bacon Pizza (gluten-free)

So…we had a blast on our trip! I got spoiled having a kitchen, even if it was only for the weekend! And my new thing is breakfast burritos in corn tortillas!! I’m gonna just start making up a big batch of the fillings and each morning fill up a little corn tortilla and have me a tasty breakfast! LOL  We also went out to a couple places that accommodated gluten free! One was the Texas Roadhouse. Now I’m not a big meat eater… but omg! Their slow roasted chicken was to die for! Apparently you  brine it, so that is next on my to try list! We also went to Mai Thai, and it was absolutely delicious! I got the pineapple fried rice… and now I’m set to make my own version of that!! If you have either of those places nearby……seriously go hit em up! Between the amazing food and the great deals I got shopping (yay new clothes & shoes!) I had a fabulous weekend with my sissy and her fam! Glad to be home now…kitchen mess and all! Anyhow… before we left I made this… on with the recipe part! LOL

Ok I know what you’re thinking…..what in the world is this weird pizza? But you’ve gotta just trust me on this one….its absolutely fantastic!! I really wanted to try something different, and well……this was it! And I’m so glad i took a chance on it cause it’s a keeper! Even hubby loved it! The flavors of the bacon and sweet onions combined with the strawberries and basil….mmmmmm! I want to make another batch of these! I make them in the 4 inch mini tart pans! The crust tastes so much  better this way, it bakes up the edges and the cheese kinda melts down it and bakes on there! Its like a little gluten free deep dish pizza! I also used dried basil instead of Italian seasoning in the crust to give it a little more basil flavor! To make it dairy free, just use soy cheese. The best part about this was that i got to use the fresh basil out of my own veggie garden! THAT was pretty exciting! 🙂 I also made a dessert pizza but……you’ll have to wait for that one! Enjoy! 🙂

Chicken Bacon & Strawberry Pizza (Printable Version)

½ cup strawberry jam

1 cup cooked chicken breast, chopped

½ cup cooked, crumbled bacon
1/4 cup sweet onion, diced
1 cup shredded mozzarella cheese
2 fresh basil leaves, finely chopped
1/2 cup fresh strawberries, diced

1 GF Bisquick Pizza crust + dried basil

Make pizza dough following package directions. Place dough in 6 mini tart pans or 1 large tart pan (or pizza pan). Bake crust for 10 minutes at 425 F. Take out of oven and spread jam over crust. Add half the cheese, sprinkle on the toppings and top with the remaining cheese. Bake for another 10-15 minutes or until lightly golden. Remove from oven and let cool for a few minutes. Remove from tart pans.

Gluten Free Personal Pan Pizza’s

Everybody loves pizza right?!? Its an American favorite! The hard part for me was coming up with a version that i can have!! (no yeast, gluten, tomatoes or dairy) Thank goodness for gluten free Bisquick!! I like a softer crust….so when we make a big pizza it doesn’t turn out quite as I’d like. Solution: Personal pan pizzas!! I have a set of mini tart pans (4 1/2 inch) that works perfectly! Then each person can make their own, which works great with food restrictions! I made mine without sauce and just a little splurge of cheese and they were amazing!! To make them dairy free you can use soy cheese. I like a mix of Hawaiian and supreme while hubby went with more of a meat lovers. We didn’t even bother with sauce, but you could add pizza sauce or even a garlic ranch sauce and add chicken! YUM! I might have to try that since I’ve got a great dairy and gluten free ranch dressing recipe! Any way you like it, these bad boys taste amazing!! The crust is perfect and guess what?! NO yeast! YAY! Gluten Free Personal Pan Pizza’s (Printable Version)


1 1/3 c GF Bisquick

1/2 tsp Italian seasoning

1/2 c water

1/3 c oil

2 eggs, beaten

Pizza toppings of your choice


Stir ingredients together until well combined. Spray 6 mini tart pans and divide batter equally. Bake at 425 for 10 minutes. Top with desired toppings and return to oven for 8 minutes. Let cool in pans 5 minutes.

Mamma Mia, It’s A Pizza Pie!

Yes its true…..gluten free pizza! And it comes in so many tasty forms, not just your classic flat pizza! I’m going to share a few of the best pizza recipe with you! And these are all easily variable since you can change out the ingredients with your favorite toppings. If you’re like me…..I like to change it up and not have the same thing every-time. The hard thing for me is that I can’t have tomato products….yes that’s right… NO marinara sauce, pizza sauce, spaghetti sauce! And since I can’t have a whole lot of lactose either, Alfredo sauce is out too! Luckily I CAN have natural hard cheeses so I just add extra cheese and viola!

Pizza Crust: Now where to begin…. since pizza is one of America’s all-time favorites foods, and one of mine as well, becoming gluten free posed a slight problem. So I set out to find a pizza crust that, well….actually tasted like pizza crust! I like the thick chewy crust, but the think crispy crust I’m starting to get used to. There are so many different GF pizza crust mixes, and I think I’ve probably tried them all. I even made some from scratch….and THAT was a disaster! LOL! A big, doughy mess. I’ve never been a fan of yeast baking though….probably because I don’t have any patience! If you like thin crispy crust, then get some GF Bisquick. It makes a nice little crust…..and its super quick & easy to mix up. One of the mixes I tried out made a huge (and i mean like 4 inches thick!) and it tasted like dumplings, as in chicken and dumplings! Thinking back, I’m pretty sure it was supposed to make 2 crusts! My bad! But my favorite and standby crust is Hodgson Mill Pizza Crust. It makes 2 crusts that are chewy and delicious! We use one and stick the other in the freezer…..take it out as we need it! Just follow the directions on the box and you’re set!

Gluten Free Pizza Poppers (Printable Version)

3/4 cup gf flour + 1/2 tsp xanthan gum
3/4 teaspoon baking powder
1 tablespoon pizza seasoning
3/4 cup milk
1 egg, lightly beaten
1 cup shredded mozzarella/cheddar cheese
1/4 cup grated Parmesan cheese
1 cup chopped pizza toppings
1/2 cup pizza sauce

1. Preheat the oven to 375 degrees. Grease a 24-cup mini-muffin pan. (Depending on how deep your pan is will determine how many you get….I only got about 18 I think) In a large bowl, whisk together the flour, baking powder and pizza seasoning; whisk in the milk and egg. Stir in the mozzarella, Parmesan and toppings; let stand for 10 minutes.

2. Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden, 20 to 25 minutes.

3. Meanwhile, microwave the pizza sauce until warmed through. Serve the puffs with the pizza sauce for dipping.

Cheesy Pizza Bread (Printable Version)

1 cup gluten-free flour + ½ tsp xanthan gum

1 1/2 teaspoons baking powder

1/4 teaspoon baking soda

1/2 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

2 large eggs

2 tablespoons extra virgin olive oil

3/4 cup buttermilk

1/2 cup grated Parmesan cheese

1 1/2 cups shredded Mozzarella cheese

½ cup shredded cheddar cheese OR 1/2 cup marinara sauce

1+ cup pizza toppings

1 teaspoon Italian Seasoning + Shredded Cheese Mixture

1.  Preheat oven to 350 degrees F. and spray 9×5 inch bread pan with non-stick cooking spray.

2.  Mix together flour, gum, baking powder, baking soda, salt and pepper. Stir in eggs, oil, buttermilk, Parmesan, Mozzarella and pizza toppings until just combined.  Pour half of batter into prepared bread pan. Top evenly with cheddar cheese OR marinara sauce then pour remaining batter over sauce.  Top with Italian seasoning and additional shredded cheese.

3. Bake for 45-60 minutes or until toothpick comes clean from center.  Let cool for 15 minutes before removing from pan.  Slice and serve warm or room temperature.

Variations: Chicken Bacon Ranch Bread~ add chopped cooked chicken, crumbled bacon bits, sliced green onions or chives, and ranch dressing mix & garlic powder.
