Apple Crisp (Gluten & Dairy Free)

Its really starting to feel like fall out there, and apples and pumpkins are my biggest cravings right now! A short drive out into the country to pick up some fresh orchard apples and viola! A delicious apple crisp! I will warn you this is the perfect apple crisp; its addicting and you wont stop eating it! For breakfast, for a snack, for dessert….and before you know it, its all gone! LOL Next up is dairy free caramel apples! YUM! But for now…enjoy 🙂

Apple Crisp (Printable Version)

Ingredients:apple crisp
5 cups Golden Delicious apples,
peeled, cored and sliced
½ cup sugar
2 tsp gluten free flour
Dash of xanthan gum
½ tsp cinnamon
¼ cup water

Topping:
½ cup quick oats
½ cup gluten free flour
½ tsp xanthan gum
½ cup brown sugar
1/8 tsp baking powder
1/8 tsp baking soda
¼ cup non-dairy margarine

Directions:
Pre-heat oven to 350 degrees Fahrenheit.

Place the apples in a 8×8 glass dish. Combine the sugar, flour, gum and cinnamon and sprinkle over the apples. Pour the water evenly over the top.

Combine the oats, flour, gum, brown sugar, baking powder, baking soda and melted butter together. Sprinkle evening over the apples.

Bake for 45 minutes.

Blueberry Peach Cobbler Bars (Gluten & Dairy Free)

Who doesn’t love fresh peaches and blueberries?!  We’re fortunate enough to have a local blueberry farm close by where you can go pick your very own fresh blueberries. The same family owns and runs a local produce shop with fresh local produce, which is great for getting the freshest and tastiest fruits and veggies! It comes in handy when trying to eat healthy, and when that baby-driven sweet tooth craving demands that i bake something! I love desserts, and so if you’ve got to indulge, why not make it a little healthier with some fresh fruit? These bars are amazingly delicious! They taste like pie, which is one of my favorites,  but its got a nice crust and crumb topping. Might I add that its way easier to make then pie crust too! This dish is quick and simple to make, and you can use up those wrinkly peaches sitting on your counter…you dont even have to peel them! How easy is that?! LOL  This has become one of my new favorites, so I hope you’ll give it a try next time you’re having a dessert craving! Enjoy 🙂

Blueberry Peach Cobbler Bars (Printable Version)

Ingredients:Blueberry Peach Cobbler Bars

Crust/Topping:

1/3 cup brown sugar
1 & 1/2 cups GF flour

½ tsp xanthan gum

1/4 tsp salt

1/2 teaspoon baking powder

1/2 teaspoon cinnamon

1 stick cold non-dairy butter

1 egg 

 

Fruit Mixture:

1 squirt lemon juice

1 cup fresh blueberries

1 cup chopped peaches (skins on, pit removed)

2 tablespoons GF flour

1/3 cup brown sugar

Directions:

Preheat oven to 400.

In a bowl combine brown sugar, flour, gum, baking powder, cinnamon and salt together. Cut in the butter with a pastry blender until it is crumbly. Stir in your egg. Divide in two. Press half on the bottom of a greased 8×8 baking dish. Bake for 5 minutes and remove from oven. Turn oven down to 375.

Meanwhile in a separate bowl toss sugar, lemon juice, flour and fruit. Spread over the top of the baked crust.  Sprinkle with remaining flour mixture.  Bake for 30 minutes. Allow to cool for about 15 minutes before slicing.

Peach Cobbler (Gluten & Dairy Free)

Need to use up those last few peaches that are still hanging around your kitchen? Its getting to be the end of peach season, but you can’t go wrong with fresh peach cobbler! And its gluten and dairy free and to die for! Its pretty darn easy to make too! The only downfall is that it has to bake for so long. That’s probably just me though……i have this whole lack of patience thing goin on! LOL  I’m working on it! But can you blame me?!  Smelling the delicious cinnamon and peach smell radiating from the oven for almost an hour!! Pure torture! And then its too hot to eat so you have to wait even longer……or dig right into it and burn the heck outta your mouth like i usually do! But….I like to think its worth it! Haha…. Hope you give this one a try…. its good even cold! Enjoy these last couple days of summer with this tasty dessert! 🙂

Peach Cobbler (Printable Version)

Ingredients

  • 1 cup gluten free flour
  • 1/2 tsp xanthan gum
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup almond milk
  • 3 c sliced peeled fresh or frozen peaches

TOPPING:

  • 2 cups water
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1 tablespoon non-dairy butter
  • 1/4 tsp ground nutmeg
  • 1/2 tsp cinnamon

 

Directions

In a large bowl, combine the flour, gum, sugar, baking powder and salt. Stir in the milk just until combined; fold in peaches. Spread into a greased 8-in. square baking dish.

In a large saucepan, combine the water, sugars, butter and nutmeg and cinnamon. Bring to boil, stirring until sugars are dissolved. Pour over top.

Bake at 400° for 40-50 minutes or until filling is bubbly and a toothpick inserted in topping comes out clean.

Peach Berry Crisp (Gluten-free & Dairy-free)

Its finally starting to heat up and actually feel like summer here! The heat reminded me that oh yeah, I have raspberries to pick! And oh my goodness did I ever! I spent 2 hours the other evening picking them and this is what i ended up with! This is the huge colander too! There’s still more to pick, but it was getting late and i was getting eaten alive by bugs! I didn’t realize how late it was so I decided to forgo dinner and head straight for dessert! There were 2 reasons behind that…my sweet tooth, and the sweet scent of fresh raspberries! I had a couple peaches to use up as well, so why not bake a warm, delicious fruit filled, oat topped peach berry crisp! You can mix it up and use whatever berry mix you want, but I love the peach raspberry combo so I stuck with that this time. When blackberries and blueberries get here I’ll throw em in the mix too! This crisp is soooo yummy! It doesn’t even need ice cream, altho if you can have it, I’d say go for it! I just didn’t want the coconut ice cream overpowering the fruit flavor! This obviously means I’ll have plenty more raspberry recipes coming up! Well…..once I get my kitchen done! Which reminds me… I have walls and a floor a ceiling now! YAY! this weekend we’ll get the walls & ceiling primed, textured and painted, and the floor epoxied. I’m super excited for next week too! We get the 4th off which means an extra day of kitchen work! We get to pick up our cabinets on Tuesday so Wednesday we’ll get those installed and hopefully start on the granite countertops! Its all starting to come together and I am STOKED!!! The only bad thing is we had to move the oven out of the kitchen to do the floors and walls so no cooking this weekend unless we can get it all done today!! Good thing its still early! I guess i better go get started! Wish us luck! LOL I have a feelin we’re gonna need it! Anyhow, on to the goods! Enjoy! 🙂

Peach Berry Crisp (Printable Version)

Fruit Ingredients:

2 med peaches, peeled, chopped

1 cup mixed berries

1  tablespoon cornstarch

2 tablespoons brown sugar

Dash of cinnamon

1 teaspoon lemon juice

Mix and place in greased 1 1/2 qrt baking dish

Topping Ingredients:

1 cup GF rolled oats

3/4 cup gluten free flour

1/2 tsp xanthan gum

1/4 cup brown sugar

1/2 teaspoon cinnamon

a pinch salt

1/4 cup non-dairy butter

Combine dry ingredients in a medium bowl. Cut in the butter.  Place the crumble mixture on top of the fruit. Bake at 350 for 30-35 minutes.
