Strawberry Banana Muffins

What a great combo; strawberries and bananas.  Plus I just LOVE muffins! These have great flavor….it’s like banana bread with bursts of strawberry throughout. They’re nice and moist too! And super easy to make…they bake up in no time! And they’re both gluten and dairy free! It’s starting to be that time of year…. there’s so many more options when you have fresh seasonal fruits and vegetables to use! This one’s definitely a keeper, so give it a try! Many more to come!! Strawberry Banana Muffins (Printable Version

1/4 cup non dairy butter, melted

1/4 cup + 2 Tbsp brown sugar

1 large egg

1/2 tsp pure vanilla extract

1 large ripe banana, mashed

1/2 cup fresh strawberries, chopped

1 cup + 2 Tbsp gluten free flour

1/2 tsp xanthan gum

3/4 tsp baking powder

1/8 tsp baking soda

1/2 tsp ground cinnamon

1/4 tsp salt

Preheat oven to 350° F In a medium sized glass bowl, melt the butter. Mix in the brown sugar, eggs, vanilla extract and mashed banana. In another bowl, combine the flour, gum, baking powder, baking soda, cinnamon, and salt.  Gently fold in the berries. Add to wet ingredients and stir until just combined. Do not over mix! Fill 6 greased muffin cups. Sprinkle with sugar. Bake 20 to 25 minutes or until a toothpick comes out clean.
